It dissolves in water at a ratio of 1:20, forming a milky white, viscous colloidal solution with a mild acidity. This powder is highly heat-resistant, nearly insoluble in ethanol and other organic solvents, but its solubility can be improved by wetting it with ethanol, glycerol, or sugar syrup, or by mixing it with more than three times the amount of sugar. It is also more stable in acidic solutions than in alkaline ones.
